Traditional winemaking process, the grapes are destemmed and
then left to macerate for ten days. Meanwhile, our only extraction job is to pump daily to unlock the full potential of the fruit. The grapes are then pressed, the presses kept separate, and the wines are racked in order to remove the larger lees before the start of the malolactic fermentation. After fermentation, the wines are again racked, then cooled to ensure optimal stability in the tank.
